Honey is an ancient product produced by bees from the nectar they collect from flowers. It is a food easy to digest, providing a source of energy. Besides being used as a sweetener instead of sugar, honey has always been recognized due to their therapeutic properties. It is consist of carbohydrates such as glucose and fructose; by minerals such as calcium, copper, iron, magnesium, phosphorus and potassium, for amino acids, organic acids such as acetic acid and citric acid which is a vitamin B complex and vitamins C, D and E. Honey also has a considerable level of antioxidants such as flavonoids and phenolic compounds.
